Egg Curry


Egg Curry



 
Egg Curry
 Preparation time: 12 minutes                                                          Servings : 3
Cooking time: 12-15 minutes 


Ingredients:
  • 5 boiled eggs
  • 1 1/2 inch ginger
  • 1 whole Garlic
  • 1 small onion
  • 1/2 inch cinnamon
  • 1/2 tsp chilli powder(Based on your spice level)
  • 1/2 tsp coriander powder
  • 1/4tsp garam masala
  • 1/2 cup tomato puree
  • 1/2 cup coconut milk
  • 4tbsp oil
  • 1 1/2 cups water
  • Salt to taste



Directions;

Step 1: Grind onion, ginger, garlic, cinnamon, by adding a little water to make fine thick paste.

Step 2: Peel the egg shells and cut egg into two halves.

Step 3: Heat oil in a sauce pan, add the ground paste. It will splutter in the beginning Saute for 2 to 3 minutes or until raw aroma vanish in a medium low heat.

Step 4: Add Chilli powder, Coriander powder, tomato puree, Coconut milk. Stir and boil for 2 minutes. Add 1 1/2 cups of water and boil for 6 to 8 minutes in a medium low heat.

Step 5: When gravy is about to become thick, add salt, Egg. Sprinkle garam masala, cover the lid and cook for 2 minutes in medium low heat.

Enjoy with rice/Roti
